Celebrating love in all its forms, Fairmont Empress is looking to captivate the hearts of guests with a series of experiences designed to embrace the month of love. This February, enjoy a sweet delight, a romantic escape, or a solo escape to indulge in self-love.
 
In celebration of Valentine’s and Palentine’s Day, Executive Pastry Chef Gerald Tan is officially launching a new line of dark and milk chocolates that are only available at Fairmont Empress. Midnight Bloom, Empress’ Reserve Noir, offers a rich velvety texture infused with notes of bark, pine, and a hint of rose, capturing the woodsy aroma of the West Coast and lush rose gardens on the property. The Golden Aura, Empress’ Reserve Le Luminaire, is smooth, creamy and infused with caramel and honey. Both signature chocolates are prominently featured in the hotel’s Afternoon Tea program and are key ingredients in desserts found on the menu at Q at the Empress. A four-piece box set of chocolates is available for purchase in the Lobby Lounge for $20, which includes: Earl Grey with Midnight Bloom, Empress Honey with caramelized white chocolate, Hazelnut Praline with Golden Aura, and Saanich Berry with white chocolate.
 
"Our new dark and milk chocolate creations are a true embodiment of Fairmont Empress. By incorporating locally sourced ingredients and elements found right on our property, including honey produced by our bees, we are offering a genuine taste of Vancouver Island,” said Executive Pastry Chef Gerald Tan. “The chocolates are truly one of a kind and reflect the essence of our unique property. I hope the chocolates bring guests the same delight I experienced while crafting them—and when one enjoys it, it transports them back to the hotel and reminds them of us."
 
Adding another touch of sweetness, Q Restaurant is hosting a special four-course dinner on Valentine’s Day, concluding with an indulgent dessert chocolate buffet curated by Chef Tan. Chef de Cuisine Tyler Paquette has created a menu to set the mood for a romantic evening. The dining experience is $135 per person and is available from 5:00pm to 9:30pm. In the spirit of love, Q Bar is also serving up specialty crafted beverages, including the 'Come Fly With Me' cocktail—a local twist on the Aviation cocktail, featuring Stillhead Blackberry Vodka, Giffard Crème de Violette, Luxardo Maraschino, and fresh-squeezed citrus. For a sweet indulgence, a dark chocolate fondue, accompanied by brown butter financier, strawberries, mini madeleines, shortbread cookies, and banana, is also available for $38.
